I don't write here as often as I used to, but the stories I've left on these pages have made me who I am. I come back occasionally to put down thoughts and stories.

I’ve continued my efforts to have have atleast one meatless meal a day and yesterday’s lunch was so delicious that I just had to share. I LOVE meal time - and since I’m no Giada, I like to spice my meals up by doing extra touches to make it feel special - lighting my favorite citrus incense, putting on an Otis Redding record, and using fun dishes and plates to make it visually appealing.
Yesterday I just pulled everything straight from the fridge and pantry (no cooking required!) - ripe white nectarine slices, white bean hummus, caprese salad with the most amazing aged balsamic, my easy homemade pickles, and bagle chips for dipping.
Brent and I sat cross leg on the couch, enjoying our bounty and letting the music move through us.  An A+ lunch in my in my opinion!
